- 1 cup moong dal

- 2 tbsp Red chilli powder
- 2 tbsp sambar masala
- 2 tbsp tamarind paste
- 1 tsp turmeric powder
- 1 tsp asefoetida
- 1 tsp Jaggery (optional)
- as required Salt as per taste
Instructions to make to make Medu Vada sambar
- Soak urad dal and moong dal for 4 hours. Grind it to a fine paste.
Traditionally only urad dal is to be used but moong dal makes it easy to digest. You can skip it. - Add black pepper powder, green chillies, cumin seeds,grated ginger,salt.mix well and with hands whisk it till it becomes light.
- Heat oil in a deep pan. Once hot fry medu Vada till golden brown.
Keep aside - Now in a deep pan add oil, once hot add mustard seeds, Fenugreek seeds allow it to splutter. Add curry leaves. Add sliced onions. Saute well.
- Now one by one add all veggies.mix well.add turmeric powder, asefoetida, Red chilli powder,sambar masala.add water and allow it to cook for 15 minutes.
- Now add tamarind paste,jaggery. Add cooked tur dal.mix well. adjust consistency.
Taste and add chilli powder and sambar masala if required.now on medium heat cook sambar for 25 minutes. - Serve hot with medu Vada. I prefer only sambar. If you want you can make coconut chutney as well.
